There are far too many lights that we use nowadays on set. The choice of lights varies from Cinematographer to Cinematographer. It completely depends on what each one’s preferences are. But most importantly it depends on what your story or your scene demands and the look that you’ve decided to go for.
There’s a book by Harry C. Box called - ‘The Set Lighting Technician’s Handbook’.
This was like a bible for us when we were learning. The 5th edition is out now and has been updated with material on controlling LED fixtures, their colour science, etc. too. Try getting that and referring to it if you can. That will answer most of your questions. As far as I remember, he does mention the different electrical systems used, the differences between the American and the European systems, the different voltage cycles, etc.
There are other books as well, like Blain Brown’s ‘Motion Picture and Video Lighting’.
Apart from explaining what fixtures and other equipment are used while lighting a set, both books also explain the ‘Why?’ behind using them, the idea of using lighting as storytelling among others.
